        Mattha is a refresher drink mostly made during summer season. Instead you can prepare it at any moment you feel it tempting. You can also try for it now while you are reading this recipe. Its damm easy to prepare…and the good part is there is no cooking into this recipes.

It’s an old traditional way of making Mattha as it mostly preferred during weddings and poojas as a cooling refresher or a digestion booster after your heavy meal. You can find Mattha in most part of the country but the name differs for different regions.

Mint gives an exotic aroma and also acts as a coolant to this drink. With just minimum ingredients you can go for it. You can make yogurt(curd) at home by adding 1 teaspoon of leftover curd to 250 ml of warm milk and rest it aside for overnight to form thick curd.

This is the simplest way of making Mattha just by adding mint, chilly, garlic and salt. It’s a easier version of masaala chaas. You can also serve Mattha as a welcome drink.

Just follow the below steps and let’s go for yummy khatta namkin sip. I know it sounds mouth watering…isn’t it?? …so rush down to your kitchen and start preparing:

Ingredients (सामग्री):

  • 2 cup curd or buttermilk (२ कप दही या छाछ)
  • 1 cup of water (१ कप पानी)
  • 2-3 green chillies  (२-३ हरी मिर्च)
  • 4-5 piece of garlic (४-५ लहसुन)
  • ½  tsp salt (१/२ छोटा चमच नमक)
  • 3-4  mint leaves (३-४ पुदीना के पत्ते)
  • 1 ½ tsp of homemade chaat masaala  (१ १/२ छोटा चमच घरका बना चाट मसाला)

How to make Mattha (मठ्ठा कैसे बनाये):

  • You can either use thick curd mixed with water or you can directly prefer readymade buttermilk for instant procedure.
  • It’s totally your choice. So if you are going with curd, you need to add 1 cup water to 2 cup of curd. Just whisk it thoroughly until it’s in a drink consistency.
  •   आप चाहे तो गाड़े दही का इस्तेमाल उसमे पानी मिलाकर करे या फिर आप छाछ का इस्तेमाल भी कर सकते है।
  • अगर आप दही का इस्तेमाल कर रहे है तो २ कप दही में एक कप पानी मिलाये और उसे पानी की कंसिस्टेंसी में आने तक फेंटे।
  • Now, take 2-3 chillies and 4-5 pieces of garlic and crush them into the mortar and pestle or you can also chop them into fine pieces. Also chop down the mint leaves into small pieces that can be easy to swallow.
  • अब २-३ हरी मिर्च और ४-५ लहसुन के टुकड़े लेके मोर्टार और मूसल में बारीक़ होने तक पीसे। अगर मोर्टार और मसूल न हो तो आप बारीक काट के लीजिये। उसी प्रकार से पुदीना के पत्ते भी बारीक़ काट ले।
  • Now I haven’t used the salt in this process as it’s completely optional depending on the sourness of the curd.

Imp Tip: Salt is optional or the quantity required depends upon the sourness in the curd.

  • Once the chillies and garlic are crushed into small pieces, you can simply add it to the buttermilk. Add the chopped mint leaves into that.
  • Also add 1 ½ teaspoon of chaat masaala and whisk properly till the chaat masaala dissolves into the buttermilk. Now your Mattha is ready to serve.
  • You can serve the glass as per your creativity, but to drink Mattha there is only one way and that is “bottoms up”.
  •  अब पीसे हुए मिर्च और लहसुन को छाछ में मिलाये। फिर उसमे बारीक़ किया हुआ पुदीना और १ १/२ चमच चाट मसाला मिलाये। और इस मिश्रण  को अच्छे से फेंटे। आपका  मठ्ठा अभी रेडी है सर्व करने के लिए।

    Points to be noted (Tips):

  • Always prefer cold Mattha to feel that spicy flavour. You can add ice cubes if required.
  • Avoid drinking during night, even if buttermilk is good for digestion but due to the curd being cold in nature, it can cause cough. So mostly prefer it in daytime.
  • Salt is optional or the quantity required depends upon the sourness in the curd.
  • If the curd our buttermilk is very sour, you can add some milk to balance the sourness.
  • You can also add 1 teaspoon juice of grated ginger, but it is optional as we have already added green chilli. By adding ginger juice, your Mattha will be more spicy and you will not be able to get that khatta tikha(sour-spicy) flavour.
  • If you feel to add some crunchier mood, you can also sprinkle some crisp boondis on the top (optional).

    Recipe for Homemade Chaat Masaala (चाट मसाला बनाने की रेसिपी):

  • Take 1 tablespoon roasted cumin ,1 tablespoon roasted black pepper,1 teaspoon Salt (slightly roasted) , ½ teaspoon asafoetida, 2 teaspoon dried mango  powder, 1 teaspoon black salt, 1 teaspoon rock salt, 1 teaspoon coriander powder and 1 teaspoon red chilli powder (to add extra spice) . Roast all ingredients.
  • १ बड़ा चमच भुना जीरा, १ बड़ा चमच भुनी काली मिरि, १ छोटा चमच नमक (हल्का भुना ), १/२ छोटा चमच हींग, २ छोटा चमच आमचूर पाउडर, १ छोटा चमच काला नमक, १ छोटा चमच सेंधा नमक, १ छोटा चमच धनिया पाउडर, १ छोटा चमच लाल मिर्च पाउडर ये सभी सामग्री को भून के लीजिए।
  • Mix it all in a bowl and grind it into a grinder until it is in powdered form.
  • अब इस भुने मसालों को बाउल में निकाले और मिक्सर में पाउडर होने तक पीसे।
  • Your chaat masaala is ready for use.
  • अब आपका होममेड चाट मसाला तैयार है।
  • Be it a fruit salad, vegetable salad, juice or any mid-time snacks …how about some panipuri or dahi vada..?….just sprinkle it with chaat masaala and the taste will blow your mind. Why don’t you try it???

Note:

  • Always keep it in air tight container for long time storage.
  • Roast all the ingredients for chaat masaala, by doing this it will absorb all the water contents from it and your masaala will be preserved for long.
  • Do prefer homemade masaala for your dish as it grants exotic satisfying flavour and the fresh smell of that masaala takes your dish to a next level.
  • Homemade masaala is absolutely good in quality rather than buying from supermarkets.
